CRITICAL FAILURES (Immediate Shutdown Risk)

☐ No sanitizer ppm verification
☐ No indirect drain / missing air gap
☐ Wastewater backing up
☐ Hand sink blocked or missing
☐ No functioning three-comp sink when required
☐ Chemical pumps not working
☐ No test strips available
☐ Grease interceptor not tied into system
